📖 About the university
Moutai Institute is a private full-time undergraduate institution in Renhuai, the county-level city in northern Guizhou administered by Zunyi that is the home of Kweichow Moutai and is widely called the capital of Chinese baijiu. It was funded and built by the Moutai Group, which began preparations in 2012; Guizhou province agreed in 2015 to submit the proposal to the Ministry of Education, the first phase of construction — teaching building, laboratory building, three student dormitories and a canteen — was completed the same year at a cumulative investment of about 445 million yuan, and on 23 May 2017 the ministry wrote to the provincial government approving the establishment of the institute. It was the first university ever established in Renhuai, and 23 May is kept as its founding anniversary. The campus on Luban Avenue covers about 1,076 mu, and as of 2023 the institute employed 509 staff and taught 4,961 students, which keeps class sizes small by Chinese standards. Eight departments and teaching units — brewing engineering, food science and engineering, resources and environment, brewing engineering automation, business administration, tourism management, a general basic teaching department and a school of Marxism — deliver fifteen undergraduate programmes. What makes the institute genuinely unusual is the curriculum itself: it is the only Chinese university built around distilled spirits, offering baijiu brewing engineering, brewing engineering, and grape and wine engineering alongside food science and engineering, food quality and safety, resource recycling science, environmental science and engineering, automation, packaging engineering, seed science, and the marketing, e-commerce, logistics, hotel and tourism management that the liquor industry needs downstream. Its practical setting is part of the teaching, since the distilleries of Maotai town, the microclimate of the Chishui river valley and the group's own production plants sit on the institute's doorstep; teaching is in Chinese and the intake is domestic.

Renhuai is a county-level city in northern Guizhou administered by Zunyi, set in deep river valleys on the Chishui River. It is the home of Kweichow Moutai and is widely described as the capital of Chinese baijiu, with distilleries lining the riverbanks around Maotai town. The climate is humid subtropical, warm and misty, and the particular water, soil and microclimate of the valley are credited with the character of the local liquor. Nearby are Red Army sites from the Long March, including the crossings of the Chishui River.
